dc.description.abstractCe travail est une étude comparative des pratiques de vitiviniculteurs artisanaux argentins, français et italiens, avec qui l’on a pu réaliser un entretien. Ce mémoire traitera d’aspects techniques sur la culture de la vigne et la transformation du fruit en vin, mais également d’aspects conceptuels comme les notions de terroir, de style et d’esthétique, mais aussi les concepts utilisés par les viticulteurs, notamment quant aux questions de durabilité et d’impacte environnemental. Enfin, nous exposerons l’importance de la sociabilité dans la transmission du savoir, les structures d’entreprise, et les réseaux de commercialisation de ces petits producteurs; - Abstract: This work is a comparative study of the techniques of Argentinian, French and Italian artisanal winemakers after interviews. This study will be about technical aspects of winegrowing and transformation of the fruits into wine, but also about conceptual notions such as terroir, esthetics, but also sustainability. We will also deal with the transmission of knowledge and the importance of sociability, as well as the business models of those producers.por
