Abstract
A Touriga Nacional é a variedade de uva portuguesa mais conhecida no mundo. A
variedade Touriga Nacional caracteriza-se pelo seu crescimento retombante, elevado
vigor e enorme sensibilidade ao desavinho, com forte impacto no rendimento.
A Touriga Nacional dá vinhos retintos, encorpados, poderosos e com excepcionais
qualidades aromáticas.
Devido à sua recente implantação no Alentejo o conhecimento técnico e científico
desta variedade é limitado daí, o estudo da sua composição fenólica fazer todo o
sentido.
Assim, este trabalho visa o estudo dos compostos fenólicos de baixo peso molecular
da casta Touriga Nacional em vinhos do Alentejo, de 2008 com fermentação
maloláctica e de 2009 sem fermentação maloláctica.
Os resultados obtidos permitem-nos afirmar que há diferenças na composição fenólica
dos vinhos de diferentes proveniências, e que o teor em compostos fenólicos varia
consoante as técnicas utilizadas na vinha, o solo em que a vinha está inserida as
técnicas de vinificação e o ano de colheita; ABSTRACT: Touriga Nacional is the best known Portuguese grape variety in the world. The variety
Touriga Nacional is characterized by its booming growth, high force and extreme
sensitivity to reduced fruit set, with strong impact on yield.
Touriga Nacional yields give inky, full-bodied, powerful wines with exceptional
aromas.
Due to its recent deployment in the Alentejo, technical and scientific knowledge of
this variety is limited, there for, the study of its phenólic composition make sense.
This work aims to study of the low molecular weight phenólic composition of Touriga
Nacional wines in Alentejo, 2008 with maloláctic fermentation and 2009 with no
maloláctic fermentation.
The results allow us to say that there are differences in the phenólic content of wines
from different origins, and that the content of phenólic compounds varies depending
on the techniques used in the vineyard, the soil in which the vineyard is settled, the
winemaking techniques and vintage.
