Segurança dos géneros alimentícios: o controlo oficial no setor das carnes

Abstract

O presente relatório descreve as atividades desenvolvidas durante o estágio curricular para conclusão do Mestrado Integrado em Medicina Veterinária no âmbito da Inspeção Sanitária, mais propriamente em Segurança dos Géneros Alimentícios. O estágio realizou-se em duas entidades, tendo começado na Autoridade de Segurança Alimentar e Económica (ASAE) e concluído na Direção Geral de Alimentação e Veterinária (DGAV). As atividades desenvolvidas foram predominantemente a avaliação de boletins analíticos e rotulagem de produtos colhidos no âmbito do PNCA, durante o estágio na ASAE, e acompanhamento da alteração dos planos de controlo oficial da DGAV, nomeadamente o PACE. O controlo oficial é essencial para garantir que os géneros alimentícios colocados no mercado são seguros. Deste modo, foi elaborado um estudo sobre a eficiência do controlo oficial efetuado em Portugal continental no setor da carne tendo como base os dados existentes do controlo efetuado pelas Autoridades competentes desde o início da produção até ao retalho; - Abstract: Food safety: Official control in the meat sector - This report describes the activities developed during the curricular internship in order to conclude the integrated master's degree in Veterinary Medicine within the scope of Sanitary Inspection, more specifically in Food Safety. The internship took place in two entities, starting at Autoridade de Segurança Alimentar e Económica (ASAE) and ending at Direção Geral de Alimentação e Veterinária (DGAV). The activities carried out were predominantly the assessment of analytical bulletins and labeling of products harvested under the PNCA, during the internship at ASAE, and the monitorization of the changes in the official control plans of the DGAV, namely PACE. The official control is essential to ensure that food placed on the market is safe. Therefore, a study was prepared regarding the efficiency of the official control carried out in mainland Portugal in the meat sector, based on the existing data of the control carried out by the competent authorities from the beginning of the production until the retail.
